In the mood for something from the Middle East? Joe has you covered with his incredible falafel recipe.

Ingredients

  • 2 cups of chickpeas, soaked then dried
  • ½ tsp of baking soda
  • 1 handful of fresh parsley leaves, no stems
  • 1 handful of fresh coriander leaves, stems removed
  • 1 onion, roughly chopped
  • 6-7 garlic cloves, peeled
  • Salt to taste
  • 1 tsp of ground black pepper
  • 1 tbsp of ground cumin
  • 1 tbsp of ground coriander
  • Chickpea flour
  • 1 tsp of baking powder
  • 2 tbsp of toasted sesame seeds
  • Oil for frying

Method

  1. Chop the onion and garlic, and add them to a mixing jug or a food processor.
  2. Add the rest of the ingredients, except for the oil and the sesame seeds.
  3. Process all ingredients using a stick blender or food processor.
  4. Add the chickpea flour, one spoon at a time, until the ingredients reach a dry consistency.
  5. Scoop out with a spoon and mould into a ball, flatten slightly.
  6. Add a generous amount of oil to the frying pan. The oil should just about cover the falafel in the frying pan.
  7. Add the falafels to the hot oil and fry in small batches.
  8. Remove the falafels from the hot oil when they form a dark brown exterior.
  9. Serve with salad, pita bread, and tzatziki or hummus dip.
