This dish will go down swimmingly with your family and chums…

Ingredients

  • 1 can of salmon
  • Half a cup of Panko bread crumbs
  • Half a red onion, finely chopped
  • 1 large egg or 2 small ones
  • Chopped chives
  • A pinch of salt

Sauce

  • Mayo
  • Lemon juice
  • Fresh dill, finely chopped

Method

  1. Place the salmon in a bowl and remove any bones from the centre.
  2. Then, flake the salmon and add the rest of the ingredients, leaving some bread crumbs for coating the patties. Mix until it has the consistency of mince meat.
  3. Wet your hands and mould the mixture into small to medium-sized patties before coating each side in bread crumbs. Set aside.
  4. Now it’s time to make the sauce. Mix some mayonnaise with the juice of a lemon and add finely-chopped dill.
  5. Fry the patties on a medium heat until golden brown on each side. Serve with a salad and pour the mayo dressing on top! Easy!
