Perfect Paella

Ingredients

  • 2 chorizos
  • 2 dozen peeled prawns
  • 1 red onion
  • 1 small capsicum
  • 1/2 cup frozen peas
  • 1 1/2 cups of short grain rice
  • 2 cups of stock/water
  • 2 tablespoons of tomato paste
  • 1 teaspoon of garlic
  • 1 teaspoon of turmeric
  • 1 teaspoon of sweet paprika
  • Olive oil
  • Salt/pepper

Method

  1. Splash a generous amount of olive oil in a large frypan. Fry the spices and garlic for a minute, add the onion and chorizo, and continue to fry for a couple more minutes before adding the capsicum, peas and rice.
  2. Continue stirring until the rice is translucent. Add the tomato paste and stock, stir and bring to the boil. Add salt and pepper.
  3. Reduce the heat to a low setting and add the prawns. Give it all one last stir, and then place the lid on the pan and cook for 15 minutes. Taste the rice; if not cooked, leave it for another five minutes. Stir and garnish with chopped parsley, and serve. Magnifico!
