Christmas Damper

Ingredients:

• 2 Cups Self Raising Flour
• 1/2 Teaspoon Mixed Spice
• 1/2 Teaspoon Cinnamon
• 1/2 Teaspoon Nutmeg
• 1/2 Teaspoon Salt
• 1/2 Cup Crushed Walnuts
• 1/2 Cup Brown Sugar
• 1/2 Cup Desiccated Coconut
• 1/2 Cup Mixed Dried Fruit
• 1/2 Cup Chopped Glace Cherries
• Enough Milk to combine

Method:

1. Place all ingredients in a bowl.
2. Combine using wooden spoon.
3. Gradually stir in milk to form a moist dough.
4. Place in camp oven and put on hot coals and add extra coals on top.
5. Place foil on base of oven, some use trivet and dust with flour.
6. Cook for around 20-30 minutes.
7. Should sound hollow when you knock on top of it.
